Founder & Principal Scientist
Jessie Smith studied biochemistry at the University at Buffalo which is what sparked her interest in yeast research.
The start of her brewing career took her to Saint Arnold Brewing Company in Houston, Texas. During her time there, she sharpened her microbiology skills and refined her palate for craft beer. Jessie eventually focused on yeast health and propagation where she was involved in establishing a yeast propagation system using existing equipment at the brewery. This resulted in more consistent fermentations and saved money on yeast.
Her next endeavor was to take on the Quality Manager position at SingleCut Beersmiths. Here she was able to manage the lab and make quality decisions to help improve both SingleCut and contract brands from multiple breweries.
Now she has established the third-party lab service, Queen City Quality focused on quality testing for breweries in the Western New York region.
